Freshwater Brewing Co taproom – an aesthetic delight

…and the beer is pretty good too. Your correspondents were able to get along to the newest brewery and taproom in Brookvale. And what a pleasure it was. Hard to believe that the DA was only approved in April of this year. And now Freshwater Brewing Co has the whitest, newest and most gleaming taproom on the Northern Breaches.

There are five founders and your correspondents had a good chat with Jonny and Tom only a couple of hours into the public opening. Naturally the boys were pumped. They’ve been working around the clock to convert an old plastics warehouse into a cavernous space that gives them plenty of room to increase their on-site brewing capacity. The founders are veterans of places like Modus Operandi and Wayward so the pedigree is good.

I’m sure the head brewer is itching to punch out some IPAs, but Freshwater has anchored its early years on delivering “Crispy, sessionable and mellow beers”. It has been hard to miss their beautifully designed cans and tap heads in the bottle shops and bars of the Northern Beaches. There’s six beers on tap at the tap room, which make up the core range. The latest is Dusky Dark – an absolutely cracking dark lager in a Czech style. Plenty of malt and eminently drinkable – it is a treat on tap.

And so to the aesthetics. There’s been plenty of thought put into every aspect of Freshwater Brewing Co.

The logo is awesome. The boys were sitting with a designer mate in the Pilu cafe overlooking Freshie Beach. They said “ Just draw this” – gesticulating at the sun rising over the beach. And so the designer did! The sun, the palms and the waves ensued.

A good logo inspires good merch – and they are struggling to keep up. The tap head designs are themed and illiards reckons a shirt per beer would go alright.

There’s a gleaming kitchen punching out Mod Oz takes on classics like fish finger sandwiches. The space is already huge, but there are plans for an upstairs north facing deck, which sounds like a place to be in summer.

When I arrived, there were about 5 people in the bar. By the time we’d left, the joint was full. The Brookvale Brewing community continues to grow. There’s great collegiality as well between Freshwater and their near neighbour 7th Day – they’ll promote each other when one is full. And based on recent events we’ve attended – that will happen often. Welcome Freshwater Brewing Co!
